phonology- unstressed syllable- schwa vs wedge

according to this link,
[ʌ] can be present in unstressed syllables

I INITIALLY thought unstressed= schwa, and stressed= wedge,

but apparently I'm wrong, wedge can ALSO be unstressed?

For example, Rachel gives the example of the word "undo", [ʌn'du]
why isn't a schwa used here, given that the first syllable is unstressed?

In an unstressed syllable, how do we know whether to use schwa or wedge?
