How do you decide which keyboard layout to use?

This goes out to anyone learning a language with more than one keyboard layout to choose from on your devices, which I suspect will be most.

My curiosity is for the Latin-alphabet languages in particular: if you’re learning German for e.g., do you go with ‘German/QWERTZ’ (the one that shifts everything to the left to make space for the ü/ö/ä characters on the right), ‘QWERTY’, or otherwise? I’ve been wrangling with the ‘German’ keyboard for authenticity reasons, but it’s been much slower to type and I’m wondering if the trade-offs are worth it.
