How are you supposed to decide which dialect to learn?

When dealing with language learning there are many languages that have such vastly different dialects that they are supposedly barely mutually intelligible. With English, we have different "dialects" but they're more so just accents and if you learn it anywhere then English speakers everywhere will understand you just fine barring certain extreme exceptions.

Apparently Italian from Sicily is barely understandable to people in Milan. Different parts of Germany can also barely understand eachother (supposedly). With Arabic? It's so wide ranging from western Africa to the border of the far east.

How do you know which one to learn? For Arabic would you learn Lebanese since it's central? For Spanish would all Spanish speakers understand Mexican Spanish? Etc.
