Mandarin or Japanese ?

Background:

My first language is English. I also speak French fluently and teach it as a foreign language. I've been studying Mandarin for over a year now and cleared my HSK 3 with very good results. However I am nowhere near speaking it confidently in even basic everyday situations. I feel like it's going to take at least ten more years to to become fluent. Besides, I haven't really found enjoyable ressources to learn it beyond the basics (books, tv, movies, etc).

On the other hand, even though I don't know a word of Japanese, I very much like animé and feel Japanese music is much better and has a wider variety than it's ZH counterpart.

Questions:

  1. My goal with either of these languages is to use it in a professional capacity (teaching + translating). Considering this, which language combination (EN-FR-ZH / EN-FR-JP) would provide more opportunities and pay better?

  2. I know Japanese is not much easier than Mandarin but the difficulties are not the same. One major problem for me are the tones in ZH. Can never remember them or used the few i remember while speaking. What are the tougher aspects of JP?

  3. Has any of you mastered either language without an immersion experience in China/Japan? I am a vegetarian, teetotaler and follow some additional food restrictions. Due to this, feel like getting food as well as socialising would be a major problem for me in these countries. Besides, the though of living in China worries me wrt safety. Any experiences?

Should I go with Japanese as it might be more fun to learn? I'll have to restart from scratch though. Or should I not waste over a year of effort and just stick to Mandarin?
