Any Greek Speakers?

I'm slowly trying to learn some Greek, and while I am making good progress, something I can't quite get my head around, is the difference between Ο and Ω. Is there a rule where you would use one in preference to the other? Or is it just a historical thing?

Similarly, is there a grammatical rule that differentiates between Η and Ε? As I find they sound very similar when pronounced, and I have been struggling to differentiate between the two when listening and trying to actually spell words.

Sorry if this is a complete rookie error, I'm still new to the language!
