Is learning a language actually possible for a self-taught?

Hi! I’m Italian and I’m planning to get to a higher level in English since I’d like to reach a C1-C2 since I might leave my country to study abroad. Also I’m considering starting a new language completely by myself (German or Polish).

I know that it’s possible to reach a decent level of knowledge of the language even if you are a self-taught, but is reaching a level of great fluency (around B2-C1) realistic without a teacher? I need to know for both my English and my new language, so that I can understand what to expect.
