Doing immersion on mobile can be tough since you don't have all the tools as on desktop. But on iPhone, you can get a really good experience that makes looking up new words much easier.
I created an iOS Shortcut script that does this and it's been extremely helpful.

It's very simple and self explanatory. For the translate step, make sure to select a language as "Detect Language" performs worse.

As you can see it's very convenient.
What you can do is bind it to the Back Double Tap accessibility feature so it runs the shortcut once you double tap the back of your phone. You can also run the shortcut by saying "Siri, [Name of Shortcut]".
If you hit Cancel instead of Done once the text shows up, the shortcut exists and won't show the image. So only hit Done if you want to manually select text.
One small issue. Sometimes it won't show the "Show Text" button. The translate text results and the screenshot will show, and you can highlight text to translate, but it won't show the button to translate everything in place. In this case, you can do a manual screenshot and it works as normal. Sent a bug report so hopefully it gets fixed in the future. Example: https://imgur.com/lSFf3Sk
Also, if you highlight a word or sentence and hit the translate button. You can easily add it to favorite so you can add them to Anki when you've finished your session.
