I've used the Assimil books and read several reviews. Most suggest it's a helpful method for language learning, although it might not bring you to a B2 level as advertised. I believe this is accurate, especially if you only use it once. The key is to repeat the material to truly grasp it (e.g. finish the book multiple times), aiming to reach a familiarity where you can read it like a book in your native language, only then it might get you to a B2 level. Of course, when it comes to speaking, practicing with native speakers is essential.
