How to study while also immersing?

I'm traveling South America for a few weeks. Immersion is extremely different to studying at home and I find myself struggling.

How can I take advantage of immersion?

I'm a beginner in Spanish. I've no idea hoe to create a structure to help while immersing. I'm also travelling with fellow English speakers so it's lots of English too.
