Topic order in language-learning texts and courses

Hi everyone, I'm working on a project right now that involves researching how the order of topics are decided in foreign language courses, i.e. the order in which constructions, vocabulary, and grammatical concepts are typically presented.

I'm interested in how this not only applies to specific languages but also if there are any universal trends across multiple languages regarding the order which things are taught. For example, things like greetings are often learned first, then maybe things like names, weather, feelings, etc. I'm curious if anyone has done a more in-depth look at this before, and if not, I'd love to hear any recommendations of courses or texts (in any language) that you feel did a good job of teaching things in an effective order and is clearly expressed in some table of contents or roadmap or something.
