Why is the goal watching TV to “just get the gist of it”?

I think I’m probably B1 in Spanish, and I’ve been watching TV shows in Spanish at .75 speed. Usually as I’m watching, I pause the show to look up words I don’t know so that I have a full understanding of what’s being said. I still get the gist of it without looking up any words, however.

So I was thinking about all the times I’ve read on this sub and elsewhere on the internet that learners should be happy just getting the gist and shouldn’t look up words they don’t know. Can someone explain why? How will I ever learn the words I don’t know if I don’t look them up? I’m not necessarily disagreeing with this advice—I just want to understand it. Thanks!
